Classic Chicken and Dumplings

2. Ingredients
- 900 g Boneless, skinless chicken breasts
- 1 medium Yellow onion, diced
- 2 medium Carrots, peeled and sliced
- 2 stalks Celery, sliced
- 3 cloves Garlic, minced
- 1 L Chicken broth
- 240 ml Heavy cream
- 1 tsp Dried thyme
- ½ tsp Black pepper
- 1 tsp Salt
- 150 g All-purpose flour
- 2 tsp Baking powder
- ½ tsp Salt
- 60 g Cold butter, cubed
- 120 ml Whole milk
- 2 tbsp Fresh parsley, chopped
3. Instructions
7 StepsPlace the chicken breasts in a 6-quart slow cooker. Add the onion, carrots, celery and garlic.
Pour in the chicken broth. Add the thyme, black pepper and salt. Cover and cook on LOW for 5–6 hours or until the chicken is tender and cooked through.
Remove the chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker. Stir in the heavy cream.
In a medium bowl, whisk together the flour, baking powder and salt. Cut in the cold butter with a fork or pastry cutter until the mixture resembles coarse crumbs. Stir in the milk just until a soft dough forms.
Drop spoonfuls of the dumpling dough over the surface of the chicken mixture. Leave a little space between the dumplings so they have room to expand.
Cover the slow cooker and cook on HIGH for 45–60 minutes or until the dumplings are cooked through and no longer doughy in the center. Avoid lifting the lid during cooking.
Sprinkle the fresh parsley over the chicken and dumplings. Let the dish rest for 5 minutes before serving.
