  • 900 g Boneless, skinless chicken breasts
  • 2 cans (425 g each) Cannellini beans, drained and rinsed
  • 150 g Frozen corn
  • 1 can (115 g) Diced green chiles
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 960 ml Chicken broth
  • 1 tsp Ground cumin
  • 1 tsp Dried oregano
  • ½ tsp Chili powder
  • ½ tsp Black pepper
  • ½ tsp Salt
  • 225 g Cream cheese, softened and cut into pieces
  • 100 g Monterey Jack cheese, shredded
  • 2 tbsp Fresh cilantro, chopped

Step 1

Place the chicken breasts in a 6-quart slow cooker. Add the white beans, corn, green chiles, diced onion and minced garlic.

Step 2

Pour in the chicken broth. Add the cumin, oregano, chili powder, black pepper and salt. Stir gently around the chicken.

Cover and cook on LOW for 5–6 hours or until the chicken is tender and cooked through.

Step 4

Remove the chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the pot.

Add the softened cream cheese to the slow cooker. Stir gently until it melts into the hot broth and the chili becomes creamy.
