French Dip Sandwiches with Au Jus
1. Overview
These sandwiches are a great choice when you want a warm dinner without much hands-on work. The beef cooks slowly until it is tender enough to pull apart. It goes into crusty rolls with melted provolone and soft onions. Serve them with the warm cooking broth for dipping and you have a simple dinner everyone can dig into.
Why You'll Love It
- ✓ Tender Shredded Beef: Slow cooking makes the beef tender enough to pull apart easily and keeps it juicy.
- ✓ Warm Au Jus: The beef cooks in a savory broth that becomes a flavorful dipping sauce for the sandwiches.
- ✓ Melted Provolone: Provolone melts nicely over the warm beef and adds a mild creamy flavor.
2. Ingredients
- 1.4 kg Beef chuck roast
- 1 medium Yellow onion, thinly sliced
- 3 cloves Garlic, minced
- 720 ml Beef broth
- 2 tbsp Worcestershire sauce
- 1 tsp Dried thyme
- 1 tsp Dried rosemary
- 1 tsp Salt
- ½ tsp Black pepper
- 6 French or hoagie rolls
- 180 g Provolone cheese, sliced
- 2 tbsp Unsalted butter
3. Instructions
9 StepsPat the beef roast dry with paper towels. Season all sides with salt and black pepper.
Heat a large skillet over medium-high heat. Brown the beef on all sides for about 2–3 minutes per side. Transfer the browned roast to the slow cooker.
Add the sliced onion and minced garlic around the beef in the slow cooker.
Pour in the beef broth and Worcestershire sauce. Add the thyme and rosemary.
Cover and cook on LOW for 6–7 hours or until the beef is very tender and pulls apart easily with a fork.
Transfer the cooked beef to a cutting board and shred it with two forks. Strain the cooking liquid if desired and return it to the slow cooker to use as the au jus.
Slice the French rolls open and lightly butter the cut sides. Place them cut-side up on a baking sheet.
Fill each roll with shredded beef and top with slices of provolone cheese. Broil for 1–2 minutes until the cheese is melted and the bread is lightly toasted.
Serve the sandwiches immediately with small bowls of warm au jus for dipping.
