- 2 lb Boneless chicken breasts
- ⅓ cup Honey
- ⅓ cup Low-sodium soy sauce
- 5, minced Garlic cloves
- 2 tbsp Apple cider vinegar
- 1 tsp Sesame oil
- 1 tsp Ground ginger
- ¼ tsp Black pepper
- 1 tbsp Cornstarch
- 2 tbsp Water
- 2, sliced Green onions

5 StepsIn a medium bowl, whisk together the honey, low-sodium soy sauce, minced garlic, grated ginger, rice vinegar, and a touch of sriracha until smooth.
Season chicken breasts lightly with salt and pepper and lay them flat in a single layer in the bottom of the crockpot.
Pour the honey garlic mixture evenly over the chicken breasts. Cover with lid and cook on LOW for 3.5 to 4 hours until fork-tender.
Remove chicken and shred with two forks. Whisk cornstarch slurry into the crockpot sauce; cook on HIGH for 10 minutes until thick and bubbly.
Return shredded chicken to the glossy sauce and toss until coated. Serve over steamed jasmine rice with sliced green onions and toasted sesame seeds.
