Tender Beef Tips and Gravy
1. Overview
This is a cozy dinner that comes together with very little fuss. The beef cooks slowly until it is tender and the gravy turns rich and savory. I like serving it over mashed potatoes because they soak up all that good gravy. It is the sort of meal that feels right on a chilly evening.

- ✓ Easy Dinner: Most of the cooking happens in the slow cooker, making this a simple meal for a busy day.

3. Instructions
7 StepsPat the beef pieces dry with paper towels. Season them with salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat. Brown the beef in batches for 2–3 minutes per side. Do not cook it through. Transfer the browned beef to the slow cooker.
Add the sliced onion and mushrooms to the slow cooker. Sprinkle in the minced garlic.
Whisk together the beef broth, Worcestershire sauce and tomato paste. Pour the mixture over the beef and vegetables. Sprinkle in the dried thyme.
Cover and cook on LOW for 5–6 hours or until the beef is tender.
Mix the cornstarch with the cold water in a small bowl until smooth. Stir the mixture into the slow cooker during the final 20–30 minutes of cooking.
Stir gently and let the gravy thicken before serving. Spoon the beef tips and gravy over mashed potatoes, rice or egg noodles.
