Cheesy Beef Taco Filling

2. Ingredients
- 500 g Ground beef, 85% lean
- 1 small Yellow onion, finely diced
- 1 small Green bell pepper, finely diced
- 2 cloves Garlic, minced
- 1 tbsp Olive oil
- 2 tsp Chili powder
- 1 tsp Ground cumin
- ½ tsp Smoked paprika
- ½ tsp Salt
- ¼ tsp Black pepper
- 120 ml Beef broth
- 150 g Cheddar cheese, freshly shredded
- 2 tbsp Fresh cilantro, chopped
3. Instructions
8 StepsHeat the olive oil in a large skillet over medium heat. Add the diced onion and green bell pepper. Cook for 3–4 minutes until they begin to soften.
Add the ground beef and cook for 5–7 minutes, breaking it apart with a wooden spoon, until browned and no longer pink.
Add the minced garlic, chili powder, cumin and smoked paprika. Stir and cook for 30–60 seconds until fragrant.
Pour in the beef broth and stir well, scraping the browned bits from the bottom of the skillet. Simmer for 3–4 minutes until most of the liquid has reduced and the beef mixture is moist but not watery.
Reduce the heat to low. Sprinkle the shredded cheddar evenly over the beef mixture. Cover the skillet for 1–2 minutes until the cheese melts.
Remove the lid and stir gently until the melted cheese is evenly distributed throughout the beef mixture.
Remove from the heat and sprinkle with chopped cilantro.
Spoon the cheesy beef mixture into warm tortillas or taco shells and serve with your preferred taco toppings.
