Preheat the oven to 375°F (190°C). Lightly grease a 6-cup muffin pan.

Crack the eggs into a medium bowl and whisk until the yolks and whites are fully combined.

Add the cottage cheese, shredded cheddar, spinach, garlic powder, salt and black pepper.

Stir gently until the ingredients are evenly distributed.

Divide the mixture between the 6 muffin cups, filling each about three-quarters full.

Bake for 18 to 20 minutes, until the centers are set and the tops are lightly golden.
